Kerala Style Egg (Mutta Curry)!:

This spicy,delicious,simple recipe will have you so egg-cited and wanting more! Try serving it warm along with fluffy phulkas for a satisfying and wholesome lunch/dinner!

Ingredient List:
-4 hard boil eggs
-1 large onion diced
-2 tbsp coconut oil
-1/4 tsp turmeric
-Salt per taste
-12 curry leaves
-1/2 tsp ginger garlic paste
-1/2 tsp black pepper
-1 green chili
-1 tsp kashmiri chili powder
-1/2 tsp garam masala powder
-1 large tomato pureed
-1/4 cup coconut milk
-1/2 tsp fennel seeds
Cooking Instructions:
Heat 2 tbsp coconut oil on a pan over medium heat.
Once oil is hot, add 1/2 tsp of mustard seeds, 1/2 tsp of fennel seeds, and let is simmer for a few seconds, and add 1/4 tsp fenugreek seeds.
Add 2 cups of sliced onions, 1/2 tsp salt to the pan, cook till onions caramelize, while stirring.
Add 1 cup finely chopped tomatoes,1 teaspoon finely chopped ginger 12 whole curry leaves.
Cook for 3-4 minutes until the tomatoes are sautéed, stir frequently.
Now add 2 teaspoon coriander powder, ½ teaspoon turmeric powder, 3 teaspoon Kashmiri red chilli powder, ½ teaspoon black pepper powder,½ teaspoon garam masala powder.
Cook for 20-30 seconds, stirring continuously.
Add a cup of water and the remaining ½ teaspoon salt and mix well.
Reduce the heat to medium-low, and cook for 3-4 minutes.
Add 4 hard-boiled eggs to the pan, and let it simmer for 3-4 minutes.
Garnish with chopped cilantro as per liking, and serve hot!!!
